This keto meatloaf is made using a pork rind, almond flour, and parmesan cheese "breadcrumb". It is topped with a zesty homemade keto barbeque sauce, and it is a family favorite!

"Breadcrumbs" 2 oz pork rinds ground ¼ cup almond flour 2 tbsp parmesan cheese ½ tsp salt ½ tsp garlic powder ¼ tsp onion powder 2 tsp Italian herbs or favorite herb blend Loaf 1.5 lbs ground beef ½ onion finely diced 3 cloves fresh garlic 1 whole egg 2 tsp salt 1 tsp black pepper 3 tsp Italian herbs or favorite herb blend Glaze 5 tbsp Primal Kitchens Ketchup 3 tbsp yellow mustard 1 tsp Worcestershire sauce 1 tbsp brown sugar substitute salt, pepper, and herbs to taste
The Glaze Combine the ketchup, mustard, sugar substitute, Worcestershire, and seasonings and whisk together until well combined.
Loaf Preheat the oven to 375°
Combine the ground beef, salt, pepper, herbs, onion, garlic, egg, and the crumbs in a mixing bowl.
Mix until just combined.
Transfer to a baking dish and form the mixture into the desired shape.
Spread the glaze over the top and sides of the meatloaf.
Place in the oven and bake at 375° for 1 hour, or until the house starts to smell really good (and the loaf reaches an internal temperature of 160°F)!
