All the Pickles All the Time
I love to snack on pickles, and on the keto diet, it is a pretty safe food to snack on. Like most things, I find that fresher is always better. So, this keto-friendly quick pickle recipe is a must-have for your snack recipe repertoire!
The Methods
There are all kinds of methods for pickling, but the basic idea is a one to one solution of vinegar and water. You will want to stick with white, apple cider, white wine, and rice vinegars, and stay away from aged or concentrated vinegars like balsamic or malt vinegar.
To this vinegar and water solution you will want to add salt and any blend of preferred pickling spices. You can add whole mustard seeds, coriander, allspice berries, red pepper flakes, peppercorns, cloves, or bay leaves. Any combination of these spices will elevate your quick pickles! I like to buy a blend of pickling spice that is already put together. This is what I use.
I like to make one jar of pickle spears and one of medallions, and I add sliced garlic and onions to mine. I eat the pickled onions on salads, or just straight from the jar! This method can be applied to pickling just about any vegetable. I have pickled onions, zucchini, carrots, and cucumbers this way.
My Keto Quick Pickles
- 1 cup water
- 1 cup vinegar
- 1 Tbsp salt
- 1 tsp pickling spices
- 1/2 of an onion sliced
- 2 cloves of garlic thinly sliced
- fresh dill
- small cucumbers
Prepare two jars with tight fitting lids.
Slice the cucumbers into spears or medallions (or both). Slice the onions and garlic, and tear the fresh dill, then distribute evenly into the two jars.
Heat the vinegar, water, salt, and pickling spice over medium-high heat until the salt is fully dissolved.
Carefully pour the hot liquid over the vegetables. Allow the jars to cool, then seal them and place them in the fridge.
Your quick pickles should be ready to enjoy in about an hour, and they will remain fresh in the refrigerator for up to two weeks, but mine never last that long!
