Finding Your Keto (Almond) Joy
When living la Vida low carb, it is important to allow yourself moments of pure joy, and to find the dessert recipes that allow you to do that without using up your entire carb allotment for the day! This recipe for keto almond joy cookies is a family favorite. Toasted coconut, semi-sweet chocolate chips, and crunchy almonds, all held together by a homemade keto-friendly sweetened condensed milk. These cookies are rich, chocolatey, and reminiscent of the classic candy treat!

What You Will Need
- skillet
- spatula

- muffin tin
- paper muffin liners
Sugar-Free Sweetened Condensed Milk
- 2 cups heavy cream
- 2 Tbsp butter
- 1 or 2 Tbsp of Swerve Granulated Sweetener
- 1 tsp vanilla
Combine all of the ingredients over medium-high heat until the mixture begins to boil, then reduce the heat to low and simmer. Continue to stir occasionally to prevent scalding.
The mixture will reduce by about half, and it will become thick and gooey. This process may take 25 or 30 minutes.
Once the mixture has reduced and thickened, allow it to cool completely.
How to Use it
This sweetened condensed milk is what binds these coconut, and almond, cookies together, but there are other uses for this delicious sweet concoction! You can add it to your morning coffee for a rich and creamy treat, or I like to have some drizzled over fresh berries for dessert!
Keto Almond Joy Cookies
- 1 1/2 cups unsweetened shredded coconut
- 1/2 cup sliced almonds
- 1 cup Lily’s Sugar-Free Chocolate Chips
- 1 cup homemade sugar-free sweetened condensed milk
Preheat the oven to 325° and line a muffin tin with paper liners.
Combine the coconut, almonds, chocolate chips, and cooled condensed milk in a mixing bowl.
Distribute the mixture evenly into 12 muffin cups, and press each one down with the back of a spoon.
Bake 15 mins or until lightly browned. Remove from the oven and allow them to cool for a few minutes, before placing them in the freezer until they firm up.
